Main Salad
Ingredients:
- Fresh Kale
- Roasted chickpeas
- Ripe avocado
Salad dressing
Ingredients:
- 2 tablespoons of Tahini
- ¾ cups raw cashews soaked for 6 hours
- 2 cup tablespoon extra - virgin olive oil
- 2 tablespoons of Tahini
- 1 red onion, cut into thin wedges
- 1 tbs lemon juice or 1 lime juice
- 2 garlic cloves
- 1 teaspoon of Dijon mustard
- Himalayan salt and pepper (as you prefer)
Method:
- Mix the kale with the salad dressing by massaging the kale into it. Then sprinkle the salad with the vegan parmesan cheese.
Vegan Parmesan Cheese
Ingredients:
- 50g raw cashews
- 3 tablespoons nutritional yeast
- 2 garlic cloves
- Himalayan salt to taste
